  • 3/4 c. graham cracker crumbs
  • 2 Tbsp. soft margarine
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 can pie filling containing cornstarch (cherry, apricot or blueberry have worked best for me)
  • 8 oz. cream cheese
  • 1/4 c. sugar

Directions

    Mix crumbs and margarine.

    Put in cupcake papers and press down with bottom of a glass.
  3. 3
    Beat cheese, egg, sugar and vanilla until smooth.

    Pour over crumbs in cupcake pans.

    Bake at 375° for 10 minutes.

    Cool completely.

    Garnish with pie filling.
