- 2 eggs
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
- 24 vanilla wafers
- 24 cupcake paper holders
Directions

1Place wafers in paper cups.

2Mix the rest of ingredients until light and fluffy.

3Fill muffin pans 2/3 full.

4Bake for 15 to 20 minutes at 375°.
