- 1 (8 oz.) pkg. cream cheese
- 1/4 c. sugar
- 1 tsp. vanilla
- 1 egg
- vanilla wafers
- cherry pie filling
Directions

1Let cream cheese soften.

2Mix all ingredients and beat with a hand mixer 7 to 10 minutes.

3Put cupcake papers into small tins. In each cupcake paper put one vanilla wafer, upside down.

4Spoon filling in cupcake paper on top of vanilla wafer.

5Bake at 350° for 15 to 20 minutes, until top starts to crack and edges are golden brown.

6Let cool.

7Spoon cherry pie filling on top of mini cheesecakes.

8Refrigerate until served.
