- 1 1/2 c. biscuit baking mix
- 1/2 c. butter or margarine, melted
- 1/2 c. milk
- 1 egg, beaten
- 1 c. (4 oz.) cooked, diced ham
- 1/2 c. shredded zucchini
- 1/2 c. chopped green onion
- 1/2 c. grated Swiss cheese
Directions

1Preheat oven to 425°.

2Prepare mini muffin cups with nonstick cooking spray.

3Place biscuit mix in large bowl.

4Combine butter, milk and egg in 2-cup glass measure.

5Mix well.

6Pour into biscuit mix; stir just until moistened.

7Add remaining ingredients; stir. Fill muffin cups 2/3 full.

8Bake 8 to 12 minutes until golden brown.

9Makes about 3 1/2 dozen mini muffins.
