  • 1 (12 ounce) package English muffins
  • 1 (14 ounce) jar pizza sauce
  • 1 (6 ounce) can sliced black olives
  • 1 (6 ounce) can mushrooms
  • 1 tomato, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (8 ounce) package shredded mozzarella-style vegan soy cheese, or to taste

    Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.

    Slice English muffins in half and toast in a toaster.

    Lay halved English muffins on the prepared baking sheet; spread 1 tablespoon pizza sauce on each. Sprinkle olives, mushrooms, tomato, red bell pepper, and green bell pepper onto muffins. Top with vegan cheese.
