- 24 vanilla wafers
- 2 (8 oz.) pkg. cream cheese, softened
- 3/4 c. sugar
- 2 eggs
- 2 tsp. lemon juice
- 1 tsp. vanilla
- 1 can (20 oz.) pie filling (any desired flavor)
- 1/2 c. sliced nuts (if desired)
Directions

1Line cupcake pans with liners (24).

2Place a vanilla wafer in bottom of each liner.

3In a small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.

4Fill the liners with the cream cheese mixture.

5Bake in a 375° oven for 15 to 20 minutes or until set.

6Top each with a spoonful of filling and a spoonful of nuts.

7Serves 24.
