- 1/2 c. graham cracker crumbs
- 2 Tbsp. melted margarine
- 1 (8 oz.) pkg. cream cheese, softened
- 1/4 c. sugar
- 1 egg
- 1/2 tsp. vanilla
- 1 (10 oz.) jar cherry preserves
Directions

1Combine graham cracker crumbs and margarine.

2Mix well.

3Line 1 3/4-inch muffin tin with miniature paper liners.

4Spoon 1 teaspoon graham cracker crumb mixture into each liner; gently press into bottom. Beat the cream cheese with electric mixer until light and fluffy. Gradually add sugar and mix well.

5Add egg and vanilla, beating well.

6Spoon mixture into liners.

7Bake at 350° for 10 minutes.

8Place cherry preserves into a small saucepan. Heat just until preserves melt.

9Spoon 1 teaspoon over each cheesecake and chill thoroughly.

10Yields 2 dozen.
