- 24 vanilla wafers
- 24 cupcake liners
- 2 (8 oz.) pkg. cream cheese, softened
- 3/4 c. sugar
- 2 eggs
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
- 1 can pie filling (any flavor)
Directions

1Line cupcake pans with liners.

2Place vanilla wafer in bottom of each liner.

3In small mixer bowl beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.

4Fill the liners 2/3 full with cheese mixture.

5Bake in 375° oven for 15 to 20 minutes or until set.

6Remove from oven and top each cheesecake with a spoonful of pie filing.

7Chill.

8Makes 24 cheesecakes.
