- 12 cup onion, chopped
- 1 tablespoon olive oil
- 14 cup golden raisin, coarsely chopped
- 3 tablespoons white wine vinegar
- 14 cup water
- 14 teaspoon hot red pepper flakes
- 14 teaspoon ground coriander
- 14 teaspoon salt
- 12 cup fresh mint leaves, chopped
Directions

1Cook onion in oil in a small heavy skillet over moderate heat, stirring, until pale golden.

2Stir in raisins, vinegar, water, red pepper flakes, coriander, and salt and simmer 2 minutes.

3Transfer to a bowl and cool completely.

4Stir in mint just before serving.
