Mint Cucumber Salad

Ingredients

  • 3 medium cucumbers, peeled, seeded and thinly sliced
  • 1/2 cup chopped onion
  • 1 teaspoon salt, to taste
  • 1/4 teaspoon pepper
  • 1 tablespoon finely chopped of fresh mint
  • 1 garlic clove, minced
  • 3/4 teaspoon dried oregano
  • 8 ounces plain yogurt, can use vanilla yogurt
  • 2 tablespoons heavy cream

Directions

    Place cucumbers and onion in a mixing bowl.

    Combine remaining ingredients in a small bowl; mix well. Pour over cucumber/onion salad. Toss to coat well.

    Chill at least 3 hours before serving.
