Ingredients
- 1/3 c. mandarin juice
- 1 Tbsp. sugar
- 2 tsp. cornstarch
- 1 egg, lightly beaten
- 2 Tbsp. lemon juice
- 1/3 c. sour cream
- 1 tsp. fresh mint, finely chopped
- 1 tsp. mandarin peel, chopped
Directions

1Combine mandarin juice, sugar, cornstarch and salt in saucepan.

2Stir until smooth, heating to a boil.

3Remove from heat, stir constantly, stir in beaten egg, return to low heat and cook a minute or two longer, stirring briskly.

4Remove from heat and blend in mandarin peel and lemon juice.

5Cool, then stir in sour cream and mint.

6Serve over fresh fruit or with fruit gelatin salads.

7Makes 1 cup.
