Mint Dressing For Fruit

Ingredients

  • 1/3 c. mandarin juice
  • 1 Tbsp. sugar
  • 2 tsp. cornstarch
  • 1 egg, lightly beaten
  • 2 Tbsp. lemon juice
  • 1/3 c. sour cream
  • 1 tsp. fresh mint, finely chopped
  • 1 tsp. mandarin peel, chopped

Directions

    Combine mandarin juice, sugar, cornstarch and salt in saucepan.

    Stir until smooth, heating to a boil.

    Remove from heat, stir constantly, stir in beaten egg, return to low heat and cook a minute or two longer, stirring briskly.

    Remove from heat and blend in mandarin peel and lemon juice.

    Cool, then stir in sour cream and mint.

    Serve over fresh fruit or with fruit gelatin salads.

    Makes 1 cup.
