- 2 cups sugar
- 3 bunches fresh mint
- 2 cups water
Directions

1In a pot, combine sugar with 2 cups water, and bring to a boil, stirring until sugar is dissolved.

2Let cool.

3Bring a pot of water to a boil.

4Fill a large bowl with water and ice.

5Plunge mint, stems and all, into boiling water for 10 seconds.

6Remove mint to ice water.

7Let cool.
-
8Squeeze excess water from mint; puree with syrup in a blender.

9Strain through a fine sieve.

10Transfer to a covered container, and freeze until solid, at least 4 hours.
