  • 4 cups Packed Mint Leaves
  • 1/3 cups Blanched Almonds
  • 2 cloves Garlic, Roughly Chopped
  • 1/4 cups Olive Oil, Plus More If Necessary
  • Coarse Salt And Freshly Ground Black Pepper

Directions

    Blend all the ingredients in a small food processor or chopper until smooth. If not using immediately, store in the refrigerator with plastic wrap completely covering and touching the surface of the pesto to prevent oxidization, or in a tightly sealed mason jar. Makes 2/3 cup.
