- 2 medium cucumbers, peeled
- 1 medium onion, chopped
- 1/2 c. packed fresh mint leaves
- 1 c. chicken broth
- 1 c. yogurt
- pepper to taste
- 1/2 c. chopped walnuts, lightly toasted
Directions

1Slice cucumbers thickly.

2Combine 1 1/2 cucumbers with onion, mint and broth in blender container. Process until finely chopped. Pour into serving bowl. Blend in yogurt and pepper. Chill, covered, for 1 to 2 hours.

3Adjust seasonings.

4Garnish with reserved finely chopped cucumbers, walnuts and freshly chopped chives.
