Ingredients

  • 1 1/2 doz. lemons (rinds and juice)
  • 4 c. water
  • 3 c. sugar
  • 6 c. canned pineapple juice
  • green food coloring
  • 1 drop peppermint flavoring
  • 1 qt. ginger ale

Directions

    Simmer rinds with water and sugar 5 minutes. Cool and squeeze rinds, discard. Add lemon and pineapple juice, color as needed and add flavoring. Add ginger ale, garnish with fresh mint. Serves 40.
