- 1 1/2 doz. lemons (rinds and juice)
- 4 c. water
- 3 c. sugar
- 6 c. canned pineapple juice
- green food coloring
- 1 drop peppermint flavoring
- 1 qt. ginger ale
Directions

1Simmer rinds with water and sugar 5 minutes. Cool and squeeze rinds, discard. Add lemon and pineapple juice, color as needed and add flavoring. Add ginger ale, garnish with fresh mint. Serves 40.
