  • 1 Tbsp. butter or margarine
  • 1 c. diced onion
  • 2 Tbsp. chopped fresh mint or 1 tsp. mint flakes
  • 2 tsp. oil
  • 4 c. thin zucchini sticks

Directions

    Combine butter and oil in large skillet and heat until butter melts.

    Add onion and saute over high heat about 1 minute.

    Stir in zucchini.

    Reduce heat to low.

    Cover and cook, stirring occasionally, until zucchini is tender, about 3 to 4 minutes. Stir in mint and cook an additional 30 seconds.
