- 1 Tbsp. butter or margarine
- 1 c. diced onion
- 2 Tbsp. chopped fresh mint or 1 tsp. mint flakes
- 2 tsp. oil
- 4 c. thin zucchini sticks
Directions

1Combine butter and oil in large skillet and heat until butter melts.

2Add onion and saute over high heat about 1 minute.

3Stir in zucchini.

4Reduce heat to low.

5Cover and cook, stirring occasionally, until zucchini is tender, about 3 to 4 minutes. Stir in mint and cook an additional 30 seconds.
