- 8 red potatoes, scrubbed and patted dry
- 12 cup olive oil
- 4 garlic cloves
- 2 tablespoons fresh mint leaves, coarsely chopped
- kosher salt
- fresh ground pepper
Directions

1Preheat oven to 350F.
