  • 1 small box vanilla pudding
  • 1/4 c. sugar
  • 2 tsp. lemon juice
  • 1/2 c. water
  • 16 oz. can pitted tart red cherries
  • 1 Tbsp. butter
  • 4 drops red coloring (optional)
  • 1 (8-inch) pie crust, baked
  • whipped topping

Directions

    Combine in saucepan pudding, sugar, lemon juice and water. Add cherries with juice.

    Cook and stir to a full boil.

    Remove from heat.

    Add butter and food coloring.

    Chill in baked 8-inch pie shell.
