Ingredients

  • 1/2 onion, chopped
  • 1 clove garlic, chopped
  • 1 lb 90% lean ground beef or ground turkey
  • 1 lb spinach leaves, cleaned
  • Nutmeg
  • Salt and pepper
  • Sour cream or yogurt

Directions

    In a pan large enough to hold the full pound of spinach, brown ground beef.

    Add chopped onion, cooking just til soft.

    Add garlic.

    Add spinach on top of ground beef and onion mixture.

    Cover and wilt for 2-3 minutes.

    Remove lid and stire to combine beef, onion, and spinach.

    Grate fresh nutmeg to taste.

    Add salt and peper to taste.

    (Use a slotted spoon to dish up to keep the juices under control.)

    Serve with a dollop of sour cream or yogurt.

    Excellent with crusty bread on the side.
