- 5 medium Carrots
- 4 medium Potatoes
- 2 medium Onion, diced
- 2 tbsp Butter
- 1 tbsp Ginger, grated
- 1 tbsp Garlic, chopped
- 3 tbsp Miso
- 1 Broth
- 1/2 bunch Parsley, chopped
- 2 medium Zucchini
- 1 cup Sake
- 1 Soy Sauce
Directions

1Peel carrots and roll cut.

2Peel potatoes and dice.

3Sweat onion in butter until tender.

4Add garlic and ginger and toast briefly.

5Add miso and stir over heat until miso darkens slightly and sticks to the pan.

6Deglaze with sake.

7Stir in enough broth to dissolve the miso.

8Add carrot and potato and place over low heat.

9Cover and cook until tender, stirring often, and adding broth as needed.

10Season with soy sauce.

11Stir in parsley.
