Miso Marinated Blackened Cod

- 3/4 cup white miso
- 1/2 cup sugar
- 1/4 sake
- 6 tablespoons mirin
- 6 to 8 black cod fillets or fillet pieces
Directions

1Over a double boiler, combine miso, sugar, sake, and mirin and whisk until sugar dissolves.

2Remove from heat and let cool.

3Refrigerate for a few hours so that marinade is cold and add black cod fillets or fillet pieces.

4Marinate for 24 to 48 hours in refrigerator.

5Remove from marinade and scrape off most of marinade that is coating the fish.

6Preheat oven to broil (oven should be very hot and heat should be coming from the top down).

7Place fish on a greased foil-lined baking sheet.

8Place baking sheet approximately 6 inches away from top heating element.

9Broil 7 to 10 minutes, until browned.

10Depending on the thickness of the fish, fish should flake away; otherwise, bake an additional few minutes.
