Ingredients

  • 10 dried shrimp
  • 5-inch piece Dashi Konbu (soup kelp)
  • 3 Araimo (dasheen), peeled and cut into chunks
  • green onions
  • 3 dried mushrooms, soaked and sliced
  • 6 c. water
  • optional additions include: sliced carrots, turnips, cubed tofu, eggs, somen, kamaboko

Directions

    Boil the shrimp, dried mushrooms and konbu in water for about 1/2 hour.

    Add vegetables and simmer until tender.

    Add about 2 heaping tablespoons miso paste.
  4. 4
    Garnish with tofu and green onions or other optional ingredients.
