Ingredients
- 3 short cucumbers
- 500 g silken firm tofu, drained
- 3 tablespoons white miso
- 1 tablespoon mirin
- 1 tablespoon sugar
- 1 tablespoon rice vinegar
- 1 egg yolk
- 14 cup rice vinegar
- 14 teaspoon shoyu
- 1 12 tablespoons sugar
- 1 tablespoon mirin
Directions

1sprinkle cucumber with salt and set aside for 20 minutes.

2place tofu in colander, put two plates on top of tofu and leave for 30 minutes to extract any moisture.

3place miso, mirin, sugar, rice vinegar, and 2 tbsp water in a saucepan and stir over low heat for 1 minutes till sugar dissolves.

4remove from heat and add egg yolk, whisking till glossy.

5cool slightly.

6cut tofu into thick sticks and put on baking tray.

7brush miso mixture over tofu and broil for 6 minutes each side till tofu is light golden.

8to make dressing put ingredients together and whisk.

9drizzle over tofu and serve.
