Miso Tomato Salsa

Ingredients

  • 1 pound Tomatoes, Diced
  • 1/2 whole Onion, Diced (approximately 1/2 Cup)
  • 1 clove Garlic (large), Minced Or Grated On A Microplane
  • 1 whole Large Jalapeno, Chopped
  • 13 bunches Cilantro Leaves (large Handful), Chopped
  • 1- 1/2 Tablespoon Red Miso
  • 1 Tablespoon Seasoned Rice Vinegar Or Lime Juice
  • 1/4 teaspoons Sesame Oil (optional)

    Mix all of the ingredients in a bowl and adjust ingredients to taste.

    Cover and refrigerate for at least 1 hour to allow flavors to blend.

    Note that the sesame and miso flavors will mellow slightly.

    Yield: 2 cups

    Note: sesame oil has a very strong flavor and some folks might prefer to omit it.

    I recommend taking a small amount of the salsa aside and adding just a few drops to see if this is your cup of tea before adding it to the whole batch.
