- 2 tbsp. butter
- 1 lg. yellow onion, chopped (1 1/2 cups)
- 3 lg. garlic cloves, minced
- 1 lg. green bell pepper, seeded and chopped (1 1/2 cups)
- 1 celery rib with leaves, chopped (3/4 cup)
- 1 tbsp. olive oil
- 2 tbsp. unbleached all purpose flour
- 1-1/2 cup dry white wine
- 4 md. tomatoes, chopped (4 cups)
- 2 tbsp. tomato paste
- 1 tbsp. hot paprika
- 1 tbsp. chopped fresh oregano leaves
- 1 tsp. dried oregano leaves, crumbled
- 1-1/2 tsp. fresh thyme leaves
- 1/2 tsp. dried thyme leaves, crumbled
- Salt (optional)
- Black pepper, freshly ground to taste
- 3/4 tsp. hot pepper sauce
- to taste, plus additional for serving
- 1 lb. md. shrimp, peeled and deveined
- 3/4 lb. lump crabmeat, picked over
- 2 cups water
- 1 cup long grain white rice
- 1 tbsp. minced fresh flat leaf parsley
- 1 tbsp. fresh lemon juice
- Fresh thyme leaves for garnish, optional
Directions

1Preheat oven to 350 F. Lightly butter a shallow 3 quart casserole and set aside.

2In a large skillet, melt butter over medium heat.

3Add onion and garlic and saute until onion is soft, about 5 minutes.

4Add bell pepper and celery and saute for 5 minutes more.

5Using a slotted spoon, remove vegetables to prepared casserole.

6Add oil to skillet and sprinkle with flour.

7Cook over medium heat, stirring constantly, for 3 minutes.

8Whisk in wine and cook, stirring constantly, for 5 minutes.

9Stir in tomatoes, tomato paste, paprika, oregano, thyme, salt, if desired, pepper, and hot pepper sauce.

10Remove from heat and set aside.

11Arrange uncooked shrimp and crabmeat over vegetables in casserole.

12Cover with tomato mixture.

13Bake casserole, uncovered, stirring often, until shrimp are pink and firm, about 20 minutes.

14Meanwhile, in a medium saucepan, bring water to a boil.

15Add rice.

16Reduce heat, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.

17Fluff rice with a fork.

18Remove casserole from oven and stir in parsley and lemon juice.

19Serve right away over rice.

20Garnish each serving with fresh thyme, if desired, and pass additional hot pepper sauce to sprinkle over each serving.
