Mixed Beans With Toast

  • 1 tbsp olive oil
  • 1 None onion, chopped
  • 2 tsp smoked paprika
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) butter beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup jarred roasted red pepper, drained and chopped
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh oregano
  • 4 None thick slices multi-grain bread, toasted

Directions

    Heat the oil in a large skillet on medium heat. Saute the onion and paprika for 3-5 mins, until onion softens.

    Add the beans, tomato and pepper. Cook on low heat for 8-10 mins, until the sauce thickens. Stir in the parsley and oregano. Season to taste. Serve with the toast.
