Mixed Greens Frittata

- 4 teaspoons olive oil
- 2 garlic cloves, minced
- 8 cups mixed greens, torn in bite sized pieces (kale, chard, spinach)
- 2 eggs
- 4 egg whites
- 1/4 cup cottage cheese
- 1/4 cup grated parmesan cheese
- 1 tablespoon flour
- 1/2 teaspoon salt
Directions

1In a large broiler-proof nonstick skillet, heat 2 teaspoons of the oil over moderate heat. Add garlic and cook for 2 minutes.

2Add the greens and cook, stirring often for 7 minutes or until very tender.

3Transfer the greens to a plate and wipe out the skillet.

4In a food processor, combine the eggs, cottage cheese, Parmesan, flour and salt.

5Add the remaining oil to the skillet and heat over moderate heat.

6Add the greens, pour the egg mixture over and cook without stirring for 10 minutes or until the eggs are set around the edges and slightly wobbly in the center.

7Preheat the broiler. Broil the frittata 6 inches from the heat for 1 minute or until the center is just set.
