Mixed Nut Toffee Brittle

  • 2 Cups Assorted Chopped Nuts-Toasted ( I used almonds and peanuts)
  • 1/4 Cup water
  • 2 Cups Granulated Sugar
  • 4 ounces Butter ( one stick unsalted)
  • 1/2 Cup King Syrup ( can substitute dark corn syrup)
  • pinch kosher salt
  • 1 1/4 Teaspoon Baking Soda

Directions

    In medium saucepan mix sugar and water.Heat on medium heat. Add butter and King Syrup. Cook till 295 degrees using a candy thermometer. Remove from heat add nuts stirring with a silicon spatula. Add baking soda ( it will bubble up) , stir quickly and pour onto a baking sheet with a silicon pad . Spread quickly and sprinkle with kosher salt.
