Mixed Vegetable Pulad

Ingredients

  • 1 1/2 lb. rice
  • 2 1/4 pt. water
  • 8 oz. carrots
  • 1 lb. peas
  • 8 oz. potatoes
  • 2 bay leaves
  • 2 big onions
  • 2 inch pieces coarsely ground cinnamon
  • 3 tsp. coarsely ground white cumin seeds
  • 4 coarsely ground cloves
  • 6 coarsely ground cardamon
  • 1 tsp. red chili powder
  • 6 oz. ghee (clarified butter)

Directions

    Wash and soak rice for 15 minutes.

    Cut the carrots into small cubes and potatoes into big pieces.

    Fry one sliced onion with green cardamon, bay leaves, until light brown.

    Add the peas, carrots, rice, coarsely ground spices and salt.

    Cook until half tender.

    Now add small pieces of peeled potatoes and cook on low fire until tender and water in rice is absorbed.

    Sprinkled fried onion slices on the top.

    Serve hot.
