- 1/2 c. cooked salad shrimp
- 1 c. mixed vegetables
- 1/2 c. chopped onion
- 2 eggs
- 1 c. sifted cake flour
- 1/2 c. water
Directions

1Pour vegetable oil at least 2-inches deep into wide skillet. Heat to 375°.

2Beat the eggs with wire whisk; blend in 1/2 cup water.

3Sprinkle the cake flour evenly over the liquid.

4Stir in flour with whisk only until moist and large lumps disappear.

5Mix the shrimp, mixed vegetables and onion into flour mixture.

6Drop by spoonfuls into hot oil.
