  • 1/2 c. cooked salad shrimp
  • 1 c. mixed vegetables
  • 1/2 c. chopped onion
  • 2 eggs
  • 1 c. sifted cake flour
  • 1/2 c. water

Directions

    Pour vegetable oil at least 2-inches deep into wide skillet. Heat to 375°.

    Beat the eggs with wire whisk; blend in 1/2 cup water.

    Sprinkle the cake flour evenly over the liquid.

    Stir in flour with whisk only until moist and large lumps disappear.

    Mix the shrimp, mixed vegetables and onion into flour mixture.

    Drop by spoonfuls into hot oil.

    Fry until lightly golden.
