Ingredients: 1 lb. ground beef; 1/2 c. chopped onion; 2 (1 1/4 oz.) envelopes taco seasoning mix; 3/4 c. Bisquick baking mix; 1 1/4 c. milk; 3 eggs; 1 c. shredded cheese; 1/4 head lettuce, shredded; 1 tomato, diced; 1/2 c. sliced olives (optional); sour cream (optional)

1/2 c. chopped onion
2 (1 1/4 oz.) envelopes taco seasoning mix
3/4 c. Bisquick baking mix
1 1/4 c. milk
3 eggs
1 c. shredded cheese
1/4 head lettuce, shredded
1 tomato, diced
1/2 c. sliced olives (optional)
sour cream (optional)

Directions

Cook meat and onions until beef is browned. Drain. Stir in seasoning mix. Spoon into greased 8 x 8 x 2-inch baking dish. Beat Bisquick, milk and eggs with wire whisk or hand beater until almost smooth. Pour over meat. Bake until crust is lightly brown and knife inserted in center comes out clean, about 25 minutes. Sprinkle with cheese and bake until cheese is melted. Cool 5 minutes. Cut into squares and garnish with lettuce, tomato, olives and sour cream, if desired.
