  • 7 oz dark chocolate chips
  • 3 tbsp unsalted butter, chopped
  • 1 tbsp instant coffee powder
  • 1 1/4 cups sugar
  • 2 None eggs
  • 1 tsp vanilla extract
  • 3/4 cups all purpose flour, sifted
  • 1/2 cup cocoa, plus extra, for dusting
  • 1/8 tsp baking soda
  • 1 cup hazelnuts, toasted, skins removed
  • 1/3 cup coffee flavored liqueur

Directions

    Preheat oven to 350°F. Lightly grease and line an 8 inch square cake pan with baking paper.

    In a medium saucepan, combine chocolate chips, butter and coffee. Stir over low heat for 4-5 minutes, until melted. Set aside to cool.

    In a large bowl, beat sugar, eggs and vanilla together until thick and pale. Fold in sifted flour, cocoa and baking soda, then chocolate mixture.

    Mix in nuts and liqueur, pour into the pan. Bake 25-30 minutes, until cooked when tested.

    Cool in the pan, then cut into squares. Dust with cocoa powder and store in an airtight container.
