- 4 oz. butter
- 4 oz. brown sugar
- 1 tbsp. golden syrup/karo syrup
- 3/4 cup strong brewed coffee, cold
- 1/2 cup yogurt
- 1 egg
- 3 cups all-purpose flour
- 1 tbsp. baking powder
- 1/2 cup chocolate chips
Directions

1Preheat oven to 375F/190C.

2Melt together the butter, brown sugar and syrup in a small pot.

3Sugar doesn't need to dissolve.

4Mix until well combined.

5Leave to cool.

6In a large bowl, beat together coffee, yogurt and egg.

7Add cooled melted mixture and mix well.

8Sift together flour and baking powder in another bowl.

9Add chocolate chips and mix through.

10Add to liquids and fold in very gently until flour is just wet.

11Fill 12 greased muffin cups with mixture and bake for about 15 minutes, until a skewer poked in the middle comes out clean.

12Cool on a wire rack.
