  • 36 Ritz crackers
  • pastry for 2 crust pie
  • 2 c. water
  • 2 c. sugar
  • 2 tsp. cream of tartar
  • 2 tsp. lemon juice
  • grated peel of 1 lemon
  • 3 Tbsp. butter
  • cinnamon to taste

Directions

    Break the crackers coarsely. Put into pastry lined pan. Combine the water, sugar and cream of tartar in a saucepan.

    Boil gently 15 minutes; add lemon juice and peel. Cool.

    Pour syrup over crackers. Dot with butter and sprinkle cinnamon. Cover with top crust. Trim fluted edges. Cut slits in top. Bake at 425° for 30 to 35 minutes. Serve warm.
