  • 2 tablespoons butter
  • 3 cups boiled potatoes cubed
  • 3/4 cup cream half and half
  • 3 tablespoons fresh parsley
  • 2 cups corned beef cooked, chopped
  • 2 green onions chopped

Directions

    Melt butter in double boiler, add potatoes, mix then pour in half and half cream, add chopped green onions and chopped corned beef and parsley.

    Stir well, do not mash potatoes.

    Place in pan and bake at 350 degrees until brown.
