Mock Bread Pudding

- 2 Tbsp. butter
- 1 large egg
- 1 1/2 c. milk
- 1/2 c. sugar
- 3 c. low-fat granola cereal, with or without raisins
Directions

1Heat oven to 325°.

2Have ready a pie plate or six 2/3 cup capacity ramekins or custard cups.

3Put butter in pie plate or ramekins to melt.

4In a medium bowl, whisk egg, milk, sugar and melted butter until blended.

5Stir in granola.

6Pour into chosen containers.

7Bake, uncovered, 30 minutes for pie plate, 25 minutes for ramekins or until pudding is no longer liquid in center. Check by inserting a knife and pushing some pudding aside. Pudding should jiggle slightly when gently shaken.

8Serves 6.
