Ingredients

  • 3 lb. potatoes, peeled and halved
  • 3 lb. chicken breast or thighs
  • 1 fresh coconut
  • 1 tsp. seasoned salt
  • 1 onion, sliced thin
  • 1/8 tsp. pepper

Directions

    Grate coconut in blender with water.

    Place chicken and onion in bottom of large pot.

    Top with potatoes.

    Pour coconut water through a strainer into pot to 1 inch below tops of potatoes.

    If needed, add more water to blender and strain again until enough water is obtained.

    Add spices.

    Boil dry until chicken beings to fry.

    Serves 8.
