- 3 lb. potatoes, peeled and halved
- 3 lb. chicken breast or thighs
- 1 fresh coconut
- 1 tsp. seasoned salt
- 1 onion, sliced thin
- 1/8 tsp. pepper
Directions

1Grate coconut in blender with water.

2Place chicken and onion in bottom of large pot.

3Top with potatoes.

4Pour coconut water through a strainer into pot to 1 inch below tops of potatoes.

5If needed, add more water to blender and strain again until enough water is obtained.

6Add spices.

7Boil dry until chicken beings to fry.

8Serves 8.
