  • 1 pinch salt
  • 13 cup dark brown sugar
  • 2 teaspoons vanilla
  • 14 cup flour
  • 14 cup cocoa powder

    Preheat oven to 350F.

    Beat the egg whites until frothy.

    Add the salt and beat to soft peaks.

    Slowly beat in the brown sugar; beat until stiff.

    Beat the egg yolks with the vanilla and fold them in.

    Mix the flour, baking powder and cocoa and sift them over the egg whites.

    Drop onto very well buttered madeleine forms and bake for about 15 minutes at 350F.
