- 14 cup garlic, chopped
- 12 cup onion, chopped
- 2 cups fresh orange juice
- 12 cup fresh lime juice
- 12 cup olive oil
- 4 teaspoons kosher salt
- 1 tablespoon black pepper
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 tablespoon fresh cilantro, chopped
Directions

1Mix together garlic, onions, and citrus juices in a bowl.

2Heat the olive oil in a large saucepan til just smoking.

3Slide the contents of the bowl into the hot oil - be very careful because the liquid will splatter.

4Simmer for 5 minutes to soften the garlic and onions.

5Season the marinade with the remaining ingredients.

6Pour everything into a blender or processor and pulse 3 times to combine.

7Pour into a plastic container, cool to room temperature; cover and refrigerate up to 2 weeks.
