  • 4 cups rolled oats
  • 1 cup thinly sliced or chopped almonds
  • 1/2 cup flaked coconut
  • 1 cup apple juice
  • Pinch of salt
  • 3 tablespoons honey
  • 1/2 cup chopped dried apples or apricots

    Preheat oven to 325 degrees.

    Lightly oil a baking sheet .

    In a large bowl, combine oats, almonds and coconut.

    In a small skillet, bring apple juice to a simmer and reduce liquid by half.

    Stir in salt and honey.

    Pour liquid over oat mixture and toss to coat.

    Bake for 40 minutes until golden brown stirring occasionally.

    As granola cools stir in dried fruit.

    Serve with milk, yogurt or over fruit
