  • 2/3 cup butter
  • 7/8 cup sugar
  • 3 eggs
  • 5 tablespoons potato starch
  • 1/2 cup almond flour
  • 6 3/8 tablespoons all purpose flour
  • 9/16 cup cocoa bittersweet, powdered
  • 5/8 cup dark chocolate
  • 3 ounces espresso
  • salt
  • bitter almond extract

    Preheat the oven to 180C.

    Beat the egg whites to stiff peaks with a pinch of salt.

    Combine the potato starch with the flour, almond flour and bittersweet cocoa.

    Melt the dark chocolate over a double boiler.

    Cream the butter with the sugar.

    Add the 3 egg yolks, then add the dry ingredients, the melted chocolate, the coffee, and the almond extract.

    Use a wooden spoon to fold the beaten egg whites into the mixture.

    Bake for approximately 35 minutes or until a toothpick inserted in the center comes out clean.
