Molasses Bread Pudding

  • 4 slices regular size stale bread with crumbs
  • 1/2 c. molasses
  • 2 Tbsp. melted margarine
  • 1 1/4 c. milk
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/2 tsp. nutmeg
  • 1 c. raisins
  • 2 eggs
  • 1/2 c. sugar

Directions

    Soak raisins in hot water to plump up.

    Break bread into small pieces; soak in milk (add more milk if needed).

    Add sugar, melted margarine and spices; mix.

    Add eggs; mix well.

    Add molasses; mix.

    Add vanilla.

    Drain raisins and add to mixture, stirring well.

    Place into greased casserole or deep pan.

    Bake at 350° for 1 hour, until brown and crusty on top.

    It will be solid to touch. Serve warm with lemon or vanilla sauce, ice cream or whipped topping.
