Ingredients

  • 3 tbsp vegetable oil
  • 4 lb chicken
  • 1 each chopped onion
  • 1 each green bell pepper
  • 3 clove garlic
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1 can 14oz can dice tomatoes
  • 1 cup chicken broth
  • 1 cup dark Mexican beer
  • 1/4 cup raisins
  • 2 each chopped chipotle peppers in adobo sauce
  • 2 tbsp creamy peanut butter
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 each squares of unsweetened chocolate chopped

Directions

    Heat oil in large skillet over medium heat add chicken in batches cook 5 to 7 minutes or until browned on all sides place in large baking pan set aside

    Add onion bell pepper and garlic to skillet; cook and stir 5 minutes or until vegetables are softened.

    Stir in chili powder, cumin and cinnamon; cook 5 minutes.

    Add tomatoes, broth, beer, raisins, chipotle peppers, peanut butter, sugar and salt; bring to a simmer cook and stir 20 minutes.

    pour vegetable mixture and chocolate into food processor or blender; process until smooth.

    Preheat oven to 350.

    Pour sauce over brown chicken pieces.

    Cover pan loosely with foil bake 45 minutes or until chicken is cooked through 165.
