- 1/2 whole Onion
- 1 clove Garlic
- 1 Tablespoon Oil
- 1/2 pounds, 78 ounces, weight Minced Pork (or Other Meat)
- 2 cups Tomato Sauce
- 1 Tablespoon Mayonnaise
- 1/2 teaspoons Turmeric
- 2 teaspoons Chili Powder
- Salt And Pepper, to taste
- 1/2 whole Onion
- 2 cloves Garlic
- 2 whole Large Green Chilies
- 1 Tablespoon Oil
- 1 cup Tomato Sauce
- 1 cup Chicken Stock
- 2 Tablespoons Peanut Butter
- 1/2 teaspoons Cinnamon
- Chili Powder, Salt And Pepper To Taste
- 2 whole Squares (1 Oz. Square) Dark Chocolate
- 1 teaspoon Hot Sauce
- 1 can (15 Oz. Can) Kidney Beans
- 4 whole Tortilla Wraps
- 1/2 cups Grated Cheese
Directions

1For the enchiladas, start by chopping half the onion and the clove garlic, finely.

2Fry in the oil, adding the mince when soft.

3Cook until the mince is browned all over.

4Meanwhile, start on the mole sauce.

5Very roughly chop the onion and the garlic cloves.

6Pulse in the blender until it forms a liquidy paste.

7Deseed the chilies if necessary, and add to the mix.

8Blend until everything is finely chopped.

9Heat some oil in a second pan and fry the onion-garlic-chili mixture for a minute or so.

10This is the base for the mole sauce.

11Add the tomato sauce and chicken stock to the mole pan.

12Turn the heat up to medium and reduce a little.

13Add the peanut butter and cinnamon.

14Allow the sauce to cook for about five minutes on a medium-low flame, turning the heat up if you want to reduce it further.

15Season with salt, pepper, and chilli powder to taste, remembering that more hot sauce will be added soon.

16In the meantime, to the skillet with the mince, add the tomato sauce, mayonnaise and turmeric.

17Add the chili powder to taste.

18Shortly before you are ready to use the sauce, turn the heat for the pan with the mole sauce down to its lowest setting and add the chocolate and hot sauce to the pan.

19Stir to melt the chocolate.

20Taste and season again.

21Start prepping the assembly ingredients.

22Heat the kidney beans in the microwave and mash with a fork.

23Spread on the bottom of a deep oven dish.

24Fill each wrap with a quarter of the mince mixture.

25Roll up tightly and place on top of the mashed kidney beans.

26Pour enough mole sauce over the top to cover.

27Sprinkle with cheese, and bake at 180 degrees C (360 degrees F) for 15-20 minutes.

28Serve.

29Freeze the rest of the mole sauce to use at a later date.
