- 7 each potatoes preferrably russett
- 1 onion
- 1 lb bacon
- 1 tsp salt
- 1/2 tsp black pepper
Directions

1Fry bacon on medium high heat in pot just to brown the bacon and bring out its fat (flavor)

2Add sliced onion, cover, remove from heat.

3Peel and slice potatoes.

4Place in pot with bacon and onion.

5Cook over medium heat for about an hour stirring occasionally.

6Be sure to gently use spoon to fold up and over potatoes to create broth and not break them.

7Add salt and pepper.
