  • 7 each potatoes preferrably russett
  • 1 onion
  • 1 lb bacon
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

    Fry bacon on medium high heat in pot just to brown the bacon and bring out its fat (flavor)

    Add sliced onion, cover, remove from heat.

    Peel and slice potatoes.
  4. 4
    Place in pot with bacon and onion.

    Cook over medium heat for about an hour stirring occasionally.
  6. 6
    Be sure to gently use spoon to fold up and over potatoes to create broth and not break them.

    Add salt and pepper.
