Monte'S Cheese Soup

Ingredients
- 1/2 c. finely diced onions
- 1/2 c. finely diced carrots
- 1/2 c. finely diced celery
- 1/4 c. melted butter
- 1/4 c. flour
- 1 Tbsp. cornstarch
- 4 c. milk
- 4 c. chicken broth
- 1/8 tsp. baking soda
- 1 lb. American cheese, cubed
Directions

1Saute onions, carrots and celery in butter in a large pan for 5 minutes or until tender.

2Add flour and cornstarch, stirring until smooth. Cook 1 minute, stirring constantly.

3Gradually add milk and chicken broth. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in soda and cheese. Reduce to low heat and cook until cheese melts.

4Makes 2 quarts.
