- 1 1/2 lb. boned chicken breast
- 1 1/2 green bell peppers, strips
- 1 c. Monterey Jack cheese, shredded
- seasoned bread crumbs
- 1/2 c. mushrooms, sliced
- 1/3 c. white wine
- 1/2 c. 1% milk
- 3 Tbsp. vegetable oil
Directions

1Slice peppers in 1/2-inch strips; slice mushrooms and set aside.

2Dip thinly sliced chicken in milk.

3Shake off excess milk and pat on bread crumbs.

4Heat 2 tablespoons oil in frypan on medium heat.

5Saute chicken breasts until golden brown.

6Drain on paper towels.

7Wipe pan out with paper towel and heat 1 tablespoon oil.

8Add green peppers and mushrooms.

9Saute about 10 minutes. Add white wine and cook another 10 minutes until wine is reduced, but pepper is still crunchy.

10Preheat oven to 350°.

11Place chicken in baking dish.

12Cover with sauteed vegetables and juices and spread shredded cheese on top.

13Bake at 350° for 20 minutes.
