- 3 Tbsp. butter
- 3 Tbsp. flour
- 3 c. milk
- 12 oz. Monterey Jack cheese
- paprika
Directions

1Cook macaroni according to package; drain.

2In saucepan over low heat, melt butter.

3Stir in flour.

4Off heat, stir in milk, keeping smooth.

5Cook over moderate heat, stirring constantly, until thickened and boiling.

6Spread 1/2 cooked macaroni over bottom of buttered 2-quart baking dish.

7Sprinkle with 1/2 cheese. Layer with remaining macaroni.

8Sprinkle with remaining cheese. Pour hot sauce evenly over top.

9Sprinkle with paprika.
