Ingredients

  • 2 c. flour
  • 1 1/4 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 3 eggs
  • 1 c. salad oil
  • 2 tsp. vanilla
  • 2 c. grated carrots
  • 1/2 c. raisins
  • 1/2 c. chopped nuts
  • 1/2 c. coconut
  • 1 apple, peeled and grated

Directions

    Mix flour, sugar, soda, cinnamon and salt.

    Stir in carrots, raisins, nuts, coconut and apple.

    Beat eggs, oil and vanilla. Stir into the flour mixture until batter is just combined.

    Spoon into well-greased muffin cups, filling to top.

    Bake 30 minutes at 350°.

    Makes 14 large or 20 small muffins.
