Ingredients
- 1/4 cup water
- 2 large onions chopped
- 4 cloves garlic
- 1 teaspoon cumin ground
- 1 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/2 teaspoon paprika
- 2 each sweet potatoes, or yams diced
- 2 each zucchini diced
- 2 each yellow summer squash diced
- 1 each carrots diced
- 2 each tomatoes diced
Directions

1Saute onions, garlic and spices in water or veggie broth.

2Add sweet potatoes, zuccini summer squash and carrots.

3Let stew.

4Add water as necessary.

5Add tomatoes, bell pepper and garbanzos.

6Let stew.

7Add raisins.

8Cook until potatoes are mushy or done to your liking (about 30 minutes).

9Serve over couscous or rice.
